Easy Peasy "Rotisserie" Chicken

So this may be the EASIEST recipe I know. It just so happens it is also one of Boo (and Stella's)  favorite recipes. Stella actually ate the majority of this beautiful bird before we even had a chance for seconds. She was banished under the bed for hours. Boo was mad. Boo was hungry. Boo was happy I made it again the next day.

Here's what you need:

1 oven Preheated to 450 Degrees
1- Whole Chicken
1- Small Onion
1- Clove of Garlic
2 Tsp- Olive oil
Salt n' Pepper

Here's how you do it:

1. Put the chicken in a pan
2. Peel and Cut onion and Garlic in half put inside the bird (this is optional)
3. Rub Olive oil all over it, in all the nooks and crannies
4. Generously Salt n' Pepper the bird (I added Rosemary too. Because, I love Rosemary)
5. Put the Chicken in the Oven, set timer for 1 hour.
6. Take big pot out of Cabinet, find a big spoon too while your at it, then hit pot repeatedly with spoon every 5 minutes while muttering and cussin under your breath... or maybe a little over your breath... does that make sense? Doesn't matter :) This is just so everyone stays away and doesn't see just how easy this is... they appreciate it more if they think it was difficult to make. I'm sneaky, I know. 

**if you want to make it "fancy" pour 1/2 cup of white wine over chicken after cooking for 45 minutes, and continue cooking for the additional 15 minutes. Ooo La La! You have a French entree now! **

Make it tonight. Your husband (and dog) will fall in love with you all over again :)
